Paleo Veggie and Beef Stew


My husband and I are trying the Paleo diet out and sometimes it is hard to come up with a great recipe because the types of food you can eat are limited.  However the diet really works and is maintainable if you get creative with recipes.  Here is one of our favorite dinner recipes.  This is a good one to make a lot of and put in small plastic containers to eat all week or have for lunch too.  Another bonus is that my 2 year old son likes it!  You should definitely try this easy recipe.

Ingredients*
      • 2 packs of Lean Ground Beef or Jennie O Lean Ground Turkey
      • 4 6 oz cans of Tomato Paste
      • 3 packs of sliced pre-washed mushrooms
      • 1 zucchini chopped
      • 1 yellow onion chopped
      • 1-2 bags of fresh pre-washed spinach
      • 2 bags of cauliflower
      • Olive oil spray
Directions

Grill lean beef or turkey in a skillet (use olive oil spray for pan), transfer to a large pot (spray bottom of pot with olive oil), add vegetables and tomato paste.  Stir occasionally until fully cooked (Start on high heat for about 7 minutes and then turn to medium heat for about 15 minutes).
